Greek traditional loukoumades

Ingredients for loukoumades:

  • 500 gr. all purpose flour
  • 1 packet (7-8 g/21/4 oz) dry yeast
  • 1/2 tsp salt
  • 1 tbsp honey
  • 2 1/2 cups warm water
  • Vegetable oil for frying

Ingredients for syrup:

  • 2 cups sugar
  • 2 cups water
  • 1 tbsp honey
  • 1 slice lemon

Direction for loukoumades:
1. Place the yeast in 1/2 cup of the hot water. In a large bowl add 2 cups of water, honey, flour, salt, yeast (with the 1/2 of water) mix until batter is thick but smooth. Cover with plastic wrap and let rise in warm place until almost doubled in size, about 1-11/2 hours.(the dough should be very soft and bubbly).
2. Pour oil into a deep fryer, or saucepan, making sure there is at least 2 inches between the oil surface and the top of the pot. Heat the oil.
3. Working in batches, slide dollops of the batter (about the size of heaped tablespoon) into the hot oil, making sure not to crowd the pan. Dollops will puff up and float to the surface. Turning occasionally, until batter is a crisp, golden brown on all sides, about 3-4 minutes.
4. Remove carefully with a slotted spoon and drain on paper towels.
5. To finish, place all fried puffs, a few every time, in the cold syrup.
Direction for syrup:
1.  In a saucepan place sugar, water, honey, lemon slice and boil for 3-5 minutes, after boiling point.
